<self-uri xlink:href="http://www.scielo.sa.cr/scielo.php?script=sci_arttext&amp;pid=S0379-39822022000400175&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.sa.cr/scielo.php?script=sci_abstract&amp;pid=S0379-39822022000400175&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.sa.cr/scielo.php?script=sci_pdf&amp;pid=S0379-39822022000400175&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen El recurso hídrico es un elemento esencial para el proceso de empaque de banano y su disponibilidad en algunos sectores está siendo limitada por el aumento en la demanda, agravándose por consecuencias del cambio climático, de ahí que es fundamental una correcta gestión del recurso para asegurar su cantidad, calidad y continuidad de la industria bananera. En esta investigación se analiza el actual consumo de agua de una planta empacadora de banano ubicada en la zona Atlántica de Costa Rica, para determinar las alternativas de diseño y cambios en procedimientos de trabajo que favorezcan su aprovechamiento eficiente y sostenible. Se efectuó una caracterización del proceso de producción a través de un diagrama SIPOC, lo que permitió identificar nueve subprocesos que están directamente relacionados con el consumo y aprovechamiento del recurso. Utilizando los registros de 49 días de proceso, se crearon dos modelos de simulación de eventos discretos, cuya validación muestra, con un 95% de confianza, que no hay diferencias significativas con respecto a los resultados generados por el modelo y los obtenidos del proceso real. Se obtuvo un consumo actual de 96 litros por caja empacada para los días entre semana y de 177 litros por caja empacada para los sábados. Por tanto, aplicando nuevamente los modelos de simulación con las modificaciones en el diseño y procedimientos de trabajo, se estima una reducción de 19% en el indicador para los días entre semana y un 10% para los sábados, representando un ahorro anual aproximado de 44.777,2 m3 de agua.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The water resource is an essential element for the banana packing and its availability in some sectors is being limited by the increase in demand, aggravated by the consequences of climate change, so it was correct management of the resource is essential to ensure its quantity, quality and continuity of the banana industry. This research analyzes the current water consumption of a banana packing plant located in the Atlantic zone of Costa Rica, to determine the design alternatives and changes in work procedures the favor its efficient and sustainable use. A characterization of the production process was carried out through a SIPOC diagram, which allowed the identification of nine sub-processes that are directly related to the consumption and use of the resource. Using the 49 days process records, two discrete event simulation models were created, the validation of which shows that, with 95% confidence, that there are no significant differences with respect to the results generated by the model and those obtained from the real process. A current consumption of 96 liters per packed box was obtained for weekdays and 177 liters per packed box for Saturdays. Therefore, applying the simulation models again with the modifications in the design and work procedures, a reduction of 19% in the indicator is estimated for weekdays and 10% for Saturdays, representing an approximate annual saving of 44.777,2 m3 of water.]]></p></abstract>
