The theme of «Roots and Tubers», from the years 2000 to 2020, is described through a domain analysis using the Agricultural Information Services Alliance (SIDALC) database. As a food group of great importance for rural populations in the Americas, roots and tubers were of interest for the results obtained in this article. Bibliometrics, bibliometric analysis, and domain analysis were investigated using secondary sources from the SIDALC database, and two types of bibliometric indicators were determined: unidimensional and multidimensional. The scope was descriptive, with a mixed analysis. From the structural relationships of scientific institutions, a high co-authorship index was obtained, demonstrating extensive collaboration in scientific outcomes. The analysis allowed for a proximity to the relevance of the «Roots and Tubers» domain in the Americas. The importance of food science topics was highlighted, as they serve as a fundamental axis for food security policies in countries across this continent.
